Recipe: Baked Fish in a Garlic White Wine Sauce

Can you say scrumptious?  This recipe is so delicious and it sounds all fancy and gourmet, but it is really easy to make!  It is also healthy! Win!  I thought we could all use a light meal after Thanksgiving's carbs and pies.


Baked Fish in a Garlic White Wine Sauce

Ingredients:
4 fish fillets (I usually use talapia)
4 cloves of garlic, crushed
2 tbs white wine (you can use any cooking wine you find in the grocery store, you don't have to use a snobby expensive brand. Unless you are a snob, then by all means!)
salt and pepper to taste
1/4 cup melted butter
1/4 cup panko bread crumbs
2 tsp dried parsley or 2 tbs fresh chopped parsley

Lay fish fillets in baking pan (grease pan if needed).  Cover in garlic, wine and seasonings.


Combine butter, bread crumbs and parsley.





 Crumble over the fish.



 Bake at 425 degrees for about 15 minutes or until fish is flaky.

Recipe: Turkey Pot Pie


This is the perfect meal to make with that left over turkey!


Turkey Pot Pie

Ingredients:
1 cup shredded or cut up turkey
1 can cream of chicken soup
1/2 cup milk
1 bag frozen mixed veggies
2-3 medium sized potatoes
salt and pepper to taste
I like to season it more with garlic powder and whatever else I feel like throwing in there
2 pie crusts

Roll out one pie crust and place in the pie pan. Prick the bottom of the crust just a little.  Bake at 325 degrees for a few minutes.  This will keep the bottom crust from getting soggy.

Peel and cube potatoes into bite sized pieces. Boil until just soft, not mushy.

Mix together the soup and milk.  Add together the turkey, veggies, potatoes and seasoning. Mix all together.

Place into the pre-baked crust.  (I've been known to top it with some cheese before placing the second crust on!) Cover with the second crust and crimp edges.  Slit center of crust to let the steam escape.

Bake at 325 degrees for about 30 minutes or until crust is browned and inside is bubbly.  Let sit for a few minutes before you cut it!

Thankful

I'm thankful for my amazing husband who I can't imagine living this life without.

I'm thankful for my boys who light up my life.

I'm thankful for my loyal friends and family who bring me so much love.

I'm thankful for all of you who take your time to read my blog. You make the time and effort worthwhile.

I'm thankful for pie.

I'm thankful for this turkey whose thighs are frighteningly similar to mine and make me a little less thankful for pie.

Recipe: Homemade Gravy

I can't give you turkey and stuffing recipes without giving you gravy how-to's!  So here is how I make some good old fashioned (and maybe even a little southern?) GRAVY love.

Accredited online colleges are an option for those who want to take cooking classes!

First off, I melt butter in a pan. Once it's melted, I whisk in some flour, a little at a time.  The general rule of thumb is one tablespoon of butter for every tablespoon flour.  I made a big ol' batch of gravy, so I used 1 cup of each. This is also the same way I start out my Sausage Gravy for Biscuits and Gravy and my Homemade Cheese Sauce. Lots of butter. Paula Deen would be proud.


Next, I use the drippings from my turkey  (or roast or whatever meat I have drippings from) to add to the gravy.  First, be sure to strain the drippings to get out all the chunks!  Add in the drippings a little at a time and whisk as you go.  If you do not have drippings, or not enough to go around, you can use chicken or beef broth depending on the meat you are serving.  You can also add in some milk for a really creamy gravy.


You are going to want to skim the fat off the top of the gravy as you go too.


Whisk and add liquids like broth and/or milk as needed to achieve the desired consistency.  If it is too runny, mix some cornstarch and water in a separate bowl and then whisk into the gravy to thicken it.

Turkey Tips!

I know a lot of people get overwhelmed at the idea of cooking a turkey for Thanksgiving.  But I have to tell you, it's really not that hard! It just takes a little attention to detail for it to turn out juicy and delicious...and beautiful!

Here are my tips for a perfect turkey!

- Slow and Low is the name of the game!  Set your oven at about 350 degrees.  Maybe even 325 if your oven runs hotter than average.  The key is to let the turkey roast very slowly.  If you place it in a super hot oven, sure it will cook faster, but it will also be dry.  It generally takes about 20 minutes per pound for a turkey to cook (longer if it's stuffed with stuffing).  I made an 18 pounder this weekend. I planned on it taking at least 5 1/2 - 6 hours.

"So what time should I put my turkey in?" you may ask.  I say to plan on the turkey being done at least half an hour before you plan on eating. So if you are eating at two and you have a 15 pound turkey, plan on putting the turkey in at about 8:30 am.  It will probably take about 4 1/2-5 hours to cook.  You also need to let the turkey rest for at least 15 minutes before carving into it.   This will also give you half an hour to place any other dishes into the oven as needed.

-Don't forget to take out the weird gross stuff they put in the neck and body cavities.  Don't ask me how I know. Just don't forget, ok?


-Turkey Tools.  You need them. I have to say that a nice roasting pan will make all the difference in how your turkey turns out.  I've used the cheap disposable foil ones and it definitely did not turn out as good as my nice one with the lid!  Having a lid is huge too.  It keeps all the steam inside the pan and makes for a really juicy bird and keeps it from getting crispy or burnt on the top and wings.  If you don't have a lid, be prepared with foil which you will want to use to cover the areas that are browning way too fast.  If you do use a lid, take it off in the last hour or so to let the top brown.

You NEED a baster if you are making a turkey. Trust me on this one. Don't try to go scooping up the juices with a spoon. Just don't do it.

Meat thermometer.  Some turkeys will have a pop-up timer in them so you know when it is done.  Even with one of those, I like to have a meat thermometer on hand to be sure it's done.

-Grease it up, baby.  If you want a juicy turkey. Grease that baby up!  I like to slather mine in butter and olive oil and lemon juice.  No, that is NOT over kill. Trust me.

-Stuff the cavity with fruits and veggies.  If you are not stuffing your turkey with , um, stuffing, then fill the empty cavity up with fruits and veggies to add flavor.  I like to use lemons, onions, garlic and oranges.  Apples are also good.  I drizzled mine in olive oil and then doused them in seasonings before placing inside the turkey.



-Season the heck out of it.  After giving the turkey a nice massage with oil and butter, I coat it with seasonings.  I use rock salt, fresh ground pepper, basil, rosemary and thyme.  I also love Bell's Seasoning.  It adds a really "thanksgiving" flavor.  Don't forget to do the underside of the turkey as well!  I also like to mix some of the seasoning and oil together in a bowl and use a basting brush to slather some yumminess in between the skin and the meat.  You can also place a whole sprig of fresh herbs under the skin too. Flavor? BOOM.



-Basting is your friend.  I like to baste the turkey every half hour or so.  Just suck up the juices from the bottom of the pan and squeeze it out all over the turkey. Heaven happens.


-Watch the clock. No forgetting about the turkey cause you're too busy making a beautiful centerpiece.  Set a timer to remind you to baste.  I like to check if it's done about three fourths of the way through the "recommended" cooking time.  Be sure to peek often during that time frame to check the pop-up timer or to check the temp with the thermometer.  I don't like relying on the pop up timer too much though because they tend to be unreliable.  To test for doneness, stick the thermometer in the thickest part of the bird, usually in the breast area.  Meat closest to the bones will appear done way quicker than the meat way down in the turkey.  A done turkey should read at 165-170 degrees Fahrenheit.


Remember to let the turkey sit at least 15 minutes before carving into it!  Enjoy!

We Live. We Love. We Learn.

There has been some drama in our family recently. Nothing I'm not used to as it seems to always be something!

I'm sure you have no idea what I mean and your families are perfectly fully functional, right?

Right.

There has been a family member that has let us down. They have reacted to situations in a disappointing way.  We're not really sure what will happen from here but there is a possibility of them no longer being a family member.  This person has been someone that has always made us pause.  We weren't fully sure about them, ya know?  There were some character issues that didn't settle well with us.  Should we trust them? Should we allow our children to become attached to them?  We just didn't know.  But they were family now.

So we did what feel is always the best answer.

We loved.

We dove in, and with our insecurities and questions we brought grace and trust and love.  We allowed ourselves and our children to become attached.  We endured hardships and disappointments.

But we loved.

Now, the worst has happened. The hardships and disappointments have gone too far.  So now what?   Where do we go from here?

Sometimes I think we didn't do enough to protect our children.  We could have foresaw this day and protected them from it.

But, that is just not true.

Life is tough. Life is hard.  I would much rather my boys learn about the difficulties of life with me by their side showing them they way.  Loving them through it.  I can't put them in a bubble and my head in the sand and pretend that life is sunshine and butterflies for their sake.  We must face the harsh realities of life together.

People let us down.  Divorce happens. Death happens. Sickness happens.

It's all about how we choose to respond to those harsh difficulties of life that matters.

And also? Should we assume the worst in people?  Should we guard our hearts and never let anyone in, ya know, just in case?  Absolutely not!  Sure, we should be smart.   But I don't want to live my life always expecting something bad to happen and that people will let us down. And I certainly don't want to teach my children to live their lives that way either.

And now we have a chance to teach our children, even at their tender young ages, that bad things happen to us sometimes.  People we trust let us down.

And you know what we are going to do?

We are going to love.

We will move on, arm in arm, and face the sadness together.  We do not know what the end result will be.

But whatever happens, we have each other.

We have lived fully.

We have loved wholly.

We have learned through it all.

Veteran's Day Pride

My husband and I both come from military families.  Grandfathers, parents, uncles, siblings and so many other family members and very dear friends of ours have served our country. Many in war. Matt's grandfather, in particular, was a P.O.W.  We named our middle son after him.  For these reasons, we have always been a patriotic family.


Matt had always wanted to join the military.  But falling in love and getting married and having babies kept getting in the way.  Two years ago he finally followed after his dream and joined the Vermont Air National Guard.  It's not hard core but his knowledge as an engineer is helping the VTANG base become more energy efficient.  I'm pretty big on being Eco-Friendly so I'm super proud of that.  He looks forward to using what he is learning to help underdeveloped countries one day as well.


 We are just getting started as a military family.  Matt just returned from being gone six weeks while he attended the Academy of Military Science to become an Officer.  (Again with the proudness!)  That six weeks was the longest most difficult time in my life and just typing that makes me feel selfish.  So many of our military families suffer from loneliness and worry as their military family member serves in dangerous situations at war.  How could I complain about six weeks?  Yet I did. Oh boy...I did.



One day Matt will be called away for a longer period of time.  For a more serious situation.  Then I will know the true meaning of sacrifice.  But for now, I am proud to stand along side him as his wife.  Willing to let him go so that others may live.  Willing to be lonely so that others may be free.  Willing to worry so others can breathe a sigh of relief for the first time in their lives.  I'm willing.  He's willing.  And that it what makes us a military family.  That is what makes me proud to be the wife of Second Lieutenant Mathew Lehman.








A very blessed Veteran's Day to all who have served and are currently serving to make this country what is. To make me who I am. For being you.

Recipe: Homemade Cheese Sauce

Who needs that box of chemically formulated cheese? Who needs the jar of processed "I'm pretending to be cheese!" stuff? Not you! Because I am giving you this delightful and easy recipe for Homemade Cheese Sauce! Replace it in any recipe for that fake stuff and your taste buds will thank you! (Not to mention your body who is not a big fan of the chemically processed stuff.)  You can also serve over pasta for homemade mac and cheese, though I think my full recipe for that is better.  You decide!

Homemade Cheese Sauce

Ingredients:
2 cups shredded Sharp cheddar cheese
4 ounces softened cream cheese
1/4 cup grated parmesan cheese
3 tbs butter
3 tbs flour
1 cup heavy cream
2 cups milk
pinch of salt and pepper

Melt butter in a pot over medium heat.  Whisk in flour, stirring for about 2-3 minutes.  Gradually whisk in the heavy cream and then the milk.  Simmer on low heat until smooth.  (Tip: You know it is smooth and thick enough when it coats the spoon)  Add in the cheeses and salt and pepper and whisk until smooth again. 

Sorry I don't have any pictures to share.  I kind of just throw this together when I need a cheese sauce and never to think to snap a picture!

Chicken Tortilla Soup


One of our family favorites!




Chicken Tortilla Soup







Ingredients:
Homemade Cheese Sauce (or use 8 oz of Velveeta, cubed - but don't, OK?)
1/4 cup butter
1/4 cup flour
3 cups chicken broth
1 cup milk
1 can of Rotel (tomatoes with green chilies)
2 cups cooked, shredded chicken
1 tsp cumin
1 tsp chili powder
salt and pepper to taste
Tortilla Chips

Melt the butter in a large pot over medium heat.  Whisk in flour and cook, stirring often for about 3 minutes.  Slowly whisk in chicken broth just a little at a time, then whisk in milk the same way.  Reduce heat to low and add cheese sauce. Stir and cook on low until all melted together.  Stir in Rotel, chicken and spices.  Heat through.  Serve with crushed tortilla chips, shredded cheese and sour cream.


 Eat so quickly that you say to your husband, "WAIT! Don't take another bite!  Take a picture of your soup with your iPhone so I can post the recipe because I already scarfed mine down so fast that I only have an empty licked bowl to show for it!"

Love and Logic Parenting: You're Grounded From Your Mom

I received my Insider's Club email from Love and Logic and the title was, "You're Grounded From Your Mom".  I was so excited to read what that meant!  Could I ground my kids from me and take a night off? I think this is such an innovative way to get kids to think and appreciate their parents and I thought you all would enjoy it too! So here is what the emails said:


Fifteen-year-old Brandi has been out of control. She refuses to listen to her mother, calls her mother filthy names, won't come home on time, and has turned the home into a battleground. Mom, in desperation, called her husband at work and demanded that he do something, which he did.
 
Dad grounded his daughter from her mom for one week. She is not allowed to talk to her mom, and Mom is not allowed to talk to her.
 
"This is the stupidest kind of discipline I ever heard!" screamed Brandi. "I need my mom. She needs to cook my meals. I need her to help me with my hair. I need her to take me shopping. How is she going to answer my phone calls? I need her to drive me to school. I hate this! None of my friends have to put up with this!"
 
Here is a youngster who is starting to realize how important her mother is. Next week Mom plans to use that famous Love and Logic mantra, "I'm happy to do the things you want when I feel respected." This is going to be interesting.
 
A great example of the power of this phrase can be found in the story "Little Johnnie," in the CD by my son, Charles Fay, Ph.D., Oh Great! What Do I Do Now?
 
 
Is that a great idea or what?! I am definitely saving that for a rainy day!  Especially once the boys become teenagers, I can see that coming in handy!
